Some professions suit some classes E.G. a hunter should take skinning leatherworking. this means as the hunter levels he can skin his foes (as hunters usually face beasts a lot) he can then sell or use the skins for leather working to craft his own armour. see how it works? next time you are deciding about professions have a think ( does this suit the class etc.)
